I would like to have some control of my work light. I was thinking to make a junction box type of set up that I plug in the standard plug from the Husky work light to some short of dimmer. Would this work?

It could work but if the LED lights are the non-dimmable type it could affect long term durability

Probably not. There's a driver in there and that's what you'd be connecting to, not the LED's. Most drivers are dimmable, but not via regular dimmers.
If you can open the lights up and see what driver is in there, then maybe I can find out for you, but without knowing, it's not likely to work.
If you have a random dimmer around, and just feel like trying it out, I dont think you can do much damage to it if it doesn't work.
