It's in the home but I thought you guys could help.

Backstory is I removed the old vanity and it had been tiled around but not underneath. New vanity is an inch narrower so I need to add tile around it to fill gaps. My strategy was going to be to tile around the footprint of the new vanity.

Where old vanity was there was no backer board. Can I just cut a piece to fit the "hole" then seal the edges to the existing board?

I don't see why you can't do that. Just use the webbed tape that covers the joints between the cement board and mortar it. Looks easy.

If it's just the depth of the cabinet that is different, then you could pad out the toe kick area and avoid dealing with the underlayment and tile issue.
