Was watching a YouTube video and the presenter was using what appeared to be an adjustable transfer punch. Ever seen such a thing? I never had.

Maybe you can post a link to the vid you saw it in and give us a headstart in answering your question. I have seen a few different transfer punches that fit different sized holes. Most use a cone to center the punch.

something like this?

To the OP, help us help you. A link to the video would be a great start. In some situations where the hole was larger than my transfer punch set, I would find a socket that fits in the hole, snug and then use a transfer punch through the drive hole. Not perfect but usually close enough.

I googled "adjustable transfer punch" and shockingly found results:

....
Which works well IF you keep the punch perfectly plumb!

Fumbling with a set of transfer punches to find the right size is a PITA, but not enough to justify $175 for those admittedly nice-looking adjustables. I use my transfer punches once or twice a week.

Rennsteig on the left and an old American made set in the wooden box. They are very useful and work well.

Nice work PCustoms, they look like they work like adjustable reamers. Likely have better hardened tips than my cheap set.

Rennsteig sells 3 sizes of adjustable self-centering center punches, page 49 of 93 of the current catalog, art. # begins with 430 14..., the regrindable center punch is available as spare part, I used the wording of the catalog:
Range 6-8 mm
Range 8-11 mm
Range 11-16 mm

The end of the sleeve is slightly (see range above) expansible and allows centering punch to be automatically centered in the hole.

I haven't used any of those recently.
