calling on experienced garage ac installers. I have a 40×60×15 stick built no windows with a 15×40 mezzanine and several small 8' rooms under the mezzanine. I live in Maryland right in the middle. It gets pretty hot and humid here. The walls have r19 batts and i plan to do blown in up top. Their is 2" xps under the slab. I had a couple of ac guys give me a idea on the sizing of the unit. They were both concerned about the ceiling height and recovery if i open the doors witch ar r19 by the way. No heat calcs were done they both said they thought i needed at least 4 ton all the generic charts seemed to reflect their advise. I have a 4ton on my house such is 2400 sqf and it does great. Fearing being undersized and also getting a good deal i pulled the trigger on a 5 ton unit. Some of the return ducting will be in the attic but all supply will be in the conditioned space. Is this unit way too big ? Should i try to sell it and get a smaller one.

AC is a strange beast and depends on many factors .... my house in PA is 1T per 1k square feet w/ foam

why would you have the doors open with the AC on? What are the mezzanine rooms used for. You have to be careful how the returns are done ... it's often best to stratify the heat and supply/ return the upper rooms independent. You don't want to pull the hot air from the ceiling

Upper rooms are partially storage partially work area. And the doors won't be open on a normal bases with the ac on . But it is definitely possible for at least one of them to be opened and closed several times a night sometimes because I'm a mechanic and move work in and out some times three vehicles a night. Not the norm though.

I would not worry about the doors opening and closing for that length of time.

Just like heat it all depends on the usage -- if you start out with a 100 degree shop on a 100 degree day .... it takes a lot of AC power. Just getting humidity out of the air. After running the big AC starts to work against you. To keep removing the humidity -- the coil must be cold.

Have you ever been in a house where you felt cold but still uncomfortable with humidity -- that's an oversized AC unit. You can be more comfortable at 75 w/ low humidity vs 70 with higher.

Personally no i haven't because i grew up in a fairly low income house ac was somthing that only came from a hand me down window unit sometimes lol. Anything was better than that so it's foreign to me. But i understand humidity vs temp and that is what promoted me to post. That being said i this is not living space so i tend to think that the issue may not be as noticeable. But it may be totally the opposite. I had originally planned on conditioning the space full time since I'm out their everyday. Worth noting i still work in a in unairconditioned shop so I'm not sure i would ever be uncomfortable in any sort of ac shop lol
