I need a 16' benchtop so decided to do it in Maple flooring. I plan on glueing and screwing two layers of 5/8" plywood, the nailing the Maple to that.

Should the T&G's of the Maple be glued? Should it be glued to the plywood?

Lastly, what finish will be reasonably resistant to gas & such?

You are better off ripping solid maple down or you could do it with maple flooring if that's what you have. Rip the width down that you want the thickness of the top to be. Turn the boards on edge and glue and clamp them together in to a "butcher block" style top. Work bench tops are much stronger that way
