I am in the process of building a 40x64x16 building myself. My local insulation company said they could spray 5" open cell or 2" closed cell. 5" OC was the most common recommendation, and he suggested I apply directly to the metal. He said I am welcome to use house wrap if I want to, but it was not necessary, as the foam would seal any gaps, etc., but if I was concerned about replacing a metal panel, it could be beneficial there.
They also are planning to blow in cellulose in the ceiling, R-49, and I am doing a single bubble condensation barrier, as even he said there are inevitably a few days per year where there would be some condensation.
I felt comfortable with this, since this is the exact combination they used on their own building that houses their shop and offices, and they've had no issues.
