I like the Govee ones. They store data and the app gives you on demand graphs, plus you can export it for analysis in Excel or with other software. I’ve had one in my shop for the past 5 years, but they have a number of models.

I almost did the same, was going to recommend the set I have (very similar to yours), then started paying attention as I'd like tie in to my other thermostats/remote monitor

Since the remotes in question are just for data collection and not control, I'd say Wi-Fi stats are safe enough. What brands I couldn't say.

Ecobee is my only recommendation for WIFi stats..for lots of reasons after installing a pile of them. They work fine with no internet, although their cloud management is free if you decide to connect them. They allow locking out changes, control of ventilators, temp alerts and require a C wire for power. They are considered learning stats and can manage setbacks based on occupation sensing.

I use the Govee ones at home and work. They're invaluable to keep track of temperatures in some remote bathrooms that I don't want pipes to burst, and keep track of the plant bulbs we store overwinter. Best feature is the low/high notifications I get on my phone when temperatures reach a certain temperature that I can program. No hub needed for the ones we've got. Been working with five of them for 3 years now and they are great. Battery life is phenomenal.

Is all you want temperature? Ebay is full of units like that. We have an old Oregon Scientific unit we use. Up to 3 stations. Commonly they are called WEATHER stations if they only report and do not control HVAC.

The unit you referenced is not a wifi thermometer (a thermometer able to be accessed via wifi using a phone or computer) and it's not commonly called a "weather station".
It's a thermometer with the ability to accept three remote "wireless" sensors.

Yolink is what I have. They are amazing and super great range. You do have to have a Yolink hub which costs about $15.00
I've got some of these. Cheap, wifi with app access via phone, temp and humidity with history and if you want, they can be used to create scenes and schedules to control their other pucks and switches. Internet required for them to work. Google Home and Alexa integration too.

I have 4 of the Govees around. One in each of the house rooms I care about and one in the garage. I find them to have a more accurate temp reading then then thermostats in the minisplits.

Allowing the sun to shine on the sensor would result in inaccurate readings. I mounted mine to the shaded side of a pillar on the north side of my house.
I have a different Govee model monitoring the temperature in my shop outbuildings. I put it on the wall next to my Emerson Sensi WiFi thermostat. Both devices agree on the inside temperature within a couple of tenths of a degree. During certain times of the year, the sun shines in through a window on the east wall and briefly shines on each device. When that happens, you can see several degrees of temperature difference until the sun moves away. Placement matters.
