I am planning on putting a sheetrock ceiling up with rolled fiberglass insulation on top. Is there anything I should/need to do to the underside of the roof first? It is just a metal roof fastened to the trusses.

I'd think you'd want a good vapor barrier.

The attic space will need to be vented if it's not already. Often with a metal roof that's done with a ridge vent. Have you thought about blow in insulation instead of the batts?
It's usually cheaper, put in as much as you want and add to it any time.

you should put a man-hole in order to get in the ceiling in the future

Already have that planned out, good thinking though.

There is soffet running under the eve and where the siding meet the ?facia board? on the "end peaks" is not completely sealed.

I plan to add blown to the walls, but want the batting in the ceiling incase I ever want to run more wiring or lights or anything. I hate having to work in the blown in stuff.

Where would I put it? Between the sheet rock and insulation?

Yes, not sure where you are located but in regards to a trap door, any warm moist air that gets thru the vapor barrier and or trap door could condense on metal sheathing and drip on insulation. Ventalation above insulation will help

I have 1/2" foam board under my steel roof. I have a full ridge vent and vented eves. I plan to put up a steel ceiling and blow in insulation . Should I put a vapor barrier on my ceiling and then fasten the steel ceiling over that? I live in Michigan and the barn will be heated part of the time.
