I like those plugs. I put one on a pressure washer. Way easier to unplug vs the std black 50 amp plug.

Yes I know it doesn't need it but does hurt anything? They seem to do fine and if I ever need 4 wire it would be there already :)
Not sure if that's code legal, but otherwise just costs more and larger wire.

Does your welder have a 125/250v plug on it or will you be making adapters?

I have a 30' cord made up for stoves with 8/4 with very similar ends . when I was renovating, we could move the stove into another room and the customer could still use it.
Also had an array of 10g cords for the 240 volt hardwood floor sander (which has all been sold) without the neutral so we could plug in to a stove or drier receptacle.
I still have various 10/4 & 10/3 cords with a 30 or 50 amp plug, depending on what I want to use it for
For OP having 4 wire is maybe never going to be used, but one never knows, and after all, this is GJ, where we are expected to over build & over spend! :lol_hitti

Almost any welder with a 50A plug can run on #10 so 10-3 would be my choice. Will be lighter and easier to manage the than the bigger cord
