Bathroom in Detached Shop??

rough it in, at least, even if it just terminates on the out side of the building, for now,

in my shop bathroom (put a floor Drain), near the toilet, I stuccoed the walls of the toilet stall, and put in a shower valve and head in toilet stall, similar to a RV shower toilet combination, (if one wants the sink on the out side of the toilet stall, and freeze is a normal, one can use out side faucets, through he wall to keep the water in a heated room (toilet stall), (a 4x5 foot room is not that expensive to heat) use a door that can get wet,

I put the shower in for emergency possibles to wash out eyes and so on if some accident happened but use regularly for showers when very dirty,

I find the Bath/toilet room a very good addition, to the shop.

rough it in. small cost now and if you never connect it, you're not out much. If you don't and want water/sewer out there later, the cost can be a little high.
My shop was built just after the house and before the driveway/landscaping was started. The water comes from the house and it has its own sewer that feeds to the municipal sewer. Put a shop sink in one of the bays and a toilet/sink upstairs. I would have put in a shower but the bathroom space was too small for it.

Do it and you will not regret it. My garage is only 50' from the house and mine will have a lav and shower...
