bathroom plumbing question

Hi all,

So I framed the 1/2 bath with a pocket door. Now to work on the plumbing. I got a Bosch 7 gallon water heater https://www.amazon.com/Bosch-Mini-Tank-Tronic-3000-ES8/dp/B0148O64JE and will be putting that on top of the bathroom in the 22" of space I have. Reason for that is because it is too big for under the vanity and can't put it between the wall and the shop sink because of the drain. Oh well...
Attached are some pics of where I am in the process.
So the vanity sink is pretty straight forward for the drain and supply lines. I plan on using pex throughout - and the basic pex support bar and fitting I can get at HD or Lowes.
I also plan on having the supply lines for the shop sink stub out in the first bay from the cinder block wall above the drain.
So can I just use flexible braided line from the stub up to the shop sink?
Also the drain stub out for the shop sink will be in that first bay also using a 1.5" sanitary Tee - then do I just use multiple extensions from the trap to the drain stub out in the wall? From the shop sink drain to the wall would be about 36-38".

Any other tips or advice?
