Batt Ceiling Insulation without a Ceiling?

I'm wanting to insulate the ceiling of my garage but won't be able to put the ceiling covering up until springtime.

Would there be any issues with just stapling the batts in place between the ceiling joists for the winter? The garage will be heated to 45 degrees all winter, hence why I want the insulation up even if I can't cover it

I don't see an issue. You could staple some kind of lightweight strapping to help support if you feel it necessary. Something you could leave in place later.

My garage original to the house has batts stapled to the joists with no sheet rock and it been that way for 20years .
Very little sagging and what droops is at a bare minimum.
I think you'll be fine.

One additional thought that is somewhat related to this subject, if you have an air compressor and have a fair amount of insulation to install, do yourself a favor and get a pneumatic staple gun (if you don't have one already). I just went with an inexpensive Arrow PT50 from Home Depot. It was a bit of an impulse purchase, but well worth the money in the time and effort it saved.
