Rafters or trusses.

More details would help. Generally, I would run 2x4s every 24" up the trusses. And 6' bubble foil insulation under metal.

It would probably be helpful for the others giving you advice to have a general location where you live. You might want to consider updating your location in your profile.

Re: before builder puts roof on pole barn ?

Too little information . . . . . .

What country ?? What state / city ?? Now would be good time to Update GJ Profile with LOCATION.

What is normal weather?? What is INSULATION plan and heating/cooling??

For metal roof, make sure attachment screws are quality (ie hex head w/ neoprene bonded washers) and long enough to hit the trusses through OSB sheeting.

Roof have overhang?? Planning on gutters??

Poles and a roof with no sidewall enclosure? The roof without sidewalls is similarly shaped to an airplane wing and will create lift if wind goes over and under. Have them use hurricane ties and fasten the heck out of the roof framing so it doesn't blow away before the sidewalls are enclosed.
