This is what I have right now:

I'd like to put 2-3 more of those lights. I have a few questions...

1. Can I just take romex and splice it into that wire and run it to my new lights?
2. If answer to 1. is yes where do I splice it at... the connection in the box or before that?
3. Will this be up to "code"?

Thanks in advance.

I am not an electrician, but...

To my knowledge, any and all splices must be in an enclosure. If you cut the romex and put a splice in between, you will need to mount a box. Doesn't have to be accessible from below, but must be in a box.

So if I splice in the existing box I should be good right?

That's what I do.

I couldn't tell from your photo if that was a box or a canned light.

You'll have one bundle incoming from the service, one going out from the box to the next box, and one pigtail to connect to the light fixture.

You can splice in inside that ceiling box, by wire-nutting the three sets of wires together (incoming, downstream, and light fixture wires), then continue to your next location, and do it again. On a standard 15A breaker with 14 ga wire, you can have at least eight or ten standard light fixtures or fluorescent fixtures connected inline this way.
