Can you run a 2" wide belt on a 6" wide belt sander? Or will it have tracking problems?

Should work just fine. You will have to run it the middle of the pulleys though as the belt moves to the tightest point and that is the crown of the pulley which is in the center.

Thanks. I notice 'knife makers' use very expensive 1" or 2" machines. Is there some reason they don't just put a 2" belt on one of these bigger 6" sanders?

You have a bed sander, knife guys use belt grinders. The grinders allow access to the blade you cannot do with a sander.
