I'm in the final stages of building a 50x100 shop with 16' walls myself. We installed a single 18' Big *** Fan model Basic 6 in the center of the shop. It's hung from the roof peak of ~24' with a beam mount and extension tube cut to 3' which gives us a about 3' of clearance to the beams at the rotor tips. It's been amazing so far.
It's been running continuously at 1%-5% to circulate the air in combination with two ~40' radiant tube heaters, which works incredibly well. I haven't had it through the hot months in UT yet, but I will tell you that at 100% there better not be loose papers laying around, or they will get scattered.
I would definitely do this again. It's a buy once, cry once kind of purchase (just under $5k with mount, extension, delivery, and tax), but I intend to use it continuously year round.
Edit: I just re-read your original post and see your ceiling is 16', not walls. You will not need an extension as the fan motor/VFD is ~3' on its own, but you need 24" clearance on the tips, so plan accordingly. I recommend contacting them and they will give you recommendations for size, as 18' may be too big. My decision was between BAF and Humongous fan, but ultimately went with BAF (obviously) due to overall value.
