I am in the midst of installing new brake lines on my Grand Prix. This vehicle has two lines to the rear, one for each wheel.
The question I have is; can I run a single line with 'T' fittings at front and rear which has been standard on everything I have ever worked on?

No. You need to duplicate the lines they way they already are. It was engineered that way for a reason. Brakes aren't something to fool around with.

Dual brake systems started as front, rear split. Newer systems are right front left rear, left front right rear. So no you can't.

Not entirely correct 1949 Caddyman. The left front, right rear, split is NOT how all vehicles are. Both my 1996 C1500 and my 2001 Impala have it set up as left and right front on one resivuar and the rear on the other. I'm 100% positive on this because I've blown brake lines on both vehicles, and you either lose both front or both rear brakes, depending on which line you blow.
I still agree, though that you NEED to keep two lines going to the rear. This is because you have ANTILOCK brakes or traction control.
Another tip, if you are replacing lines, use the copper nickel alloy lines instead of the steel or stainless lines. once you've used the alloy lines, you'll never use steel ones again. The alloy lines won't rust out in a couple years, and they are way easier to bend and flare. Also, when doing a line repair, just do the entire vehicle if you intend on keeping it for any length of time. No sense in patching one section when the rest is ready to blow out as well.

All vehicles built since 2008 will be cross braking and 4 wheel abs because of government mandated stability control. Some trucks did have one rear line even up to 2000s. A base Impala in 2001 did not have ABS as standard equip but an LS did and hence would have cross braking and traction control standard. But as stated earlier he has 2 lines and cant just replace with one.
