What are the pro's/con's of 2 doors or 3 doors for my new house, and the 3 car garage?

Fewer doors= fewer openers and tracks.

With single doors you might be able to have more space between cars

Single doors= narrower openings. Depending on whether you have a straight shot or have to make a turn to get into the garage (side entry), you might appreciate the wider space that a double door offers.

Three will be more expensive up front.
Three will offer more flexability later.
Three will force some space between cars.
IMO three just looks better.
