Building a new Garage questions

So I'm in the planning stages of building a new garage behind my attached garage, I have a contractor that will do the work at cost, but, I'm trying to figure out what is best, do a poll barn type garage or build from the bottom up. What is the difference? I see lots of companies online that will sell you a garage alot cheaper then building from the ground up, all you need is a concrete slab. What have some of you guys done and why?

Pole barn kit but I live in the country. It was the easiest way to get 2100 square feet. Also allowed us to do the construction. Only thing I paid to get contracted was the concrete.
Diy pole barns is where I got my kit, materials were top notch and any questions were answered quickly.

Metal buildings are cheap here and go up quick. I went stick built because I wanted to be insulated and somewhat climate controlled without having to pay huge $$$ for spray foam or build another shop inside the shop so it could use conventional insulation. Metal building came out as about twice the work and a good 1/3~2/3 more costly.

So if I need it heated an cooked it's better to go stick built?

I don't see how a stick built is going to be better than steel in hvac. You can get different grades of insulation for both.

Red iron steel was close to the same costs as stick built when I did mine, no reason to go with wood in that case. Shop around..
