Cabin subpanel help

Ill be hooking up this 125amp subpanel for a cabin/cottage build. No gas on property and everything will be electrical.
2awg (3 legs) with 6 awg ground Range running 30’ away in 2” schedule 40.
Here is a list of some of the things I plan on having and wondering would this be ok and safe to run? Especially if the cool top is being used and taking a hot shower at the same time while tv and lights are on???
40amps, tankless water heater 75amps, washer and dryer 30amps, mini splits 30
Amps, fridge 8-10 amps, lights 5 amps
Can get a gas meter o to property but thatll be costly at about $2k plus running to each maybe another $500 in materials.
Thanks and let me know if im within the capacity of the 125amp panel and its safe to do???

a tankless water heater is really gonna be a deal breaker here. Can you go with a tank water heater? or go with gas?

#2 Cu is not large enough for 125a

What the heck is a cool top?

I think your formatting got jumbled.

Do you plan to put the proper fitting on the PVC as it enters the panel?

I can't imagine using a panel that small in anything but a shed.

But either way, it's a sub so the 125 a rating doesn't matter much. What size breaker were you planning to use in the panel that feeds this? Is it copper wire or aluminum?

Most of your current (amps) numbers are way too high. Even most full size stoves won't pull 40 amps with everything on. Mini split seems very high also, would guess about half that.
