Can epoxy flooring never cure?

Hey all! I made an account on here to ask a bit of a strange question. It has a pretty long backstory to it as well, so if you can, I'd appreciate the read and advice.

So basically, around 2 and a half years ago, my family decided to have our three-car garage fixed up. We had a company come in and sand off the original epoxy floor (which I'm guessing was..quite old at that point, since we've had this house for 13 years). They used what I believe was a polyaspartic top coating. However, the first time that they applied it, it wasn't up to my parents' standards as it appeared uneven and had some blemishes that they were not satisfied with. The company had to come in again and redo the entire process, and this whole project took several weeks to undergo. During that time, I was having a pretty bad reaction to the overgassing and had to live elsewhere while the floor was curing. The whole experience was very unpleasant for me, and since then I have had some concerns about whether or not the second attempt cured successfully. The garage continued to give off an offgassing smell for longer than I thought was normal. We also have to use rubber mats for one of the cars because it had originally left tire marks.

The garage looks great still, but I suppose I am just curious if there is a way to test if is normal and fully cured. I can send pictures of the garage if that helps. I feel a bit silly posting this, but I'm just trying to get a better understanding of it all to hopefully quell my anxieties.

I know that epoxies do have a shelf life and it they are old before mixing they will not cure.

Mine took a while to cure, but if you can't leave a fingernail impression in it, it's cured. IIRC mine took about a month before that happened. No funny offgassing for me though. Smell was gone after a few days.
