Is there a rule of thumb for installing can lights in a room? How far apart should they be spaced for optimum lighting without overdoing it and installing too many? Thanks for the help!

Spacing is going to vary based on the fixture type. The number is going to be limited on the wattage of the lights and the circuit capacity. Also make sure you get the correct type of recessed fixture for if the ceiling area is insulated or not insulated.

I have heard the half the ceiling height is a good starting point. Proper lighting design and calculations should be considered as it really depends on how much light you want and where you want it as said above.
