Yes you can and yes I did but my trusses were 12 feet apart. You need to verify that your trusses are designed to have the weight of a ceiling, aka dead load, on the bottom chord.
Joist hangers and 2x6s. I bought a palm nailer and am very glad I did. You don't use those little short hanger nails, but actual 16d.

If your trusses are 5' O.C. you might want to consider using 10' sheets.
Have you considered using metal siding on the ceiling instead of drywall ?

I love my metal ceiling! Screw it up (fasten it) and you are done.
I saw some of the metal ceilings, but I would really like to have a more finished looking ceiling. I'm also putting a home theater in the shop, so I really don't want to add even more metal for sound to bounce off of. I could do drywall over the HT, and then metal over the shop. Hmmm.... so many decisions. I also saw where they make this metal furring channel to mount drywall to. Has anyone ever used that on a ceiling? Can it be mounted to the trusses directly?
I wish I would have used metal when I done mine..
Would definitely recommend metal for shop part. Section off the home theatre portion and do that section in drywall. Chance for moisture and other shop related stains / abuse for drywall premature wear and or damage. Metal is hands down best wearing surface for shop ceiling that I've seen. Get a light color tin and it bounces the light nicely too!
You will still have to strap your joists so the span is not so large for the tin. Just my 02.

1/2" drywall is50+lbs 5/8" is 70#-5ft is tooo much span.You'll need
furring strips(wood) or hat channel(metal)every 16" across your joists
24" and rock can bow down.use metal for work side foamboard-theater.
Course with a theater I wouldn't get anything done.

Use the 1/2 inch Ultralight Sheetrock by USG and 24 inch spacing won't be a problem.
Would blocking or furring strips be better? I wonder about using the furring strips because it doesn't seem like that's enough to screw the drywal to and have it hold. Same goes for the metal hat channel. I was thinking 2x4 blocking in between trusses would give better hold, but it would also increase the weight by like 0.75 psf. I would guess hat channel or furring would add less than a third of that. If I used furring strips, what size would i use for a 5 foot span? I'm still trying to find a place that sells the hat channel around here, but it almost sounds like I would have to order online for that.

With a 5ft span I'd use at least 2X4's on 24" centers as blocking between the truss, with the 2X4 vertical (not flat).

I would consider this, in 10' sheets. It would look good and reduce heat transfer and noise.

You can span 5/8 rock up to 24" oc. The hat channel would be at a drywall supply house that contractors go to. But wood will be cheaper. Also when you hangen the rock 3 screws in the field. That's 6 total on each stud. I've been hanging rock most of my life so that's what I would do.
