¾ Rigid electrical conduit, NOT EMT nor IMC, but regular rigid conduit, will work as it is nothing more than ¾ water pipe anyhow. If the instructions suggested conduit as an alternate, that is the conduit they were referring to.

x3. You want this, and not EMT, because the part that goes into the fan has an MPT pipe thread. Buy a 10' length and cut it to size, or buy a 6' pre-cut length if your store has them and that length works for you. Having pipe cut to length adds a LOT to the price, because then you pay by the foot.
Just one more pointer. However you choose to cut the upper end (which doesn't need to be threaded, but needs to be cross drilled for the pin), be sure to de-burr it, or else it can damage the wires.

I wouldn't expect PVC to wobble any more than steel. Any wobble would be a function of an imbalanced fan, not anything to do with the pipe. My only concern would be failure of the glue joint or end of the pipe under tension, but neither should be an issue if done right (and I'm sure Jack did it right).
