So the contractor just finished with Wallboard and there is a lot of leftover dust/debris. I want to protect the floor with something. What is the best was to smooth out/clean up the rough troweled concrete floor and protect it from damage?
I would like to find something in the DIY range of product.

I will be working on a car restoration project! It was just hand troweled when it was installed. Nobody came back and did anything else that I know of. It is not as smooth as my current garage but not as rough as my sidewalk, somewhere in between.

Can you rent a diamond grind machine?

Any liquid coating is going to 'telegraph' through the floor texture so if you don't want your floor to look like a painted broom finish floor, it should be grinded. The floor will have to be quite smooth so you don't see the texture or grind marks.

Using a full fleck broadcast (much more expensive than a standard epoxy floor with medium broadcast if done properly) will help greatly to hide texture and imperfections.

Grinders can be rented from tool rental stores, but don't underestimate the amount of grinding needed since you are not just 'prepping' but attempting to 'change the texture' which is a much bigger job.

Alternately you can just cover over the floor with garage tiles like our www.supratile.com or something similar offered by vendors here. Lots of options!

With texture being a major concern, I would grind it, prime it and go back with 90-100% solids epoxy followed by a good top coat. The more I use the product with just a little solvent, the more I love it. What I really like about these kits for your application is the top coat. Very resistant to automotive chemicals

We are grinding a poorly troweled floor today. The diamond grinder will help and the full-flake system will help further to make it less noticeable.
