I've vacuumed and swept and used the leaf blower multiple times and I'm still pulling up dust on my hand and tape. Any reason not to mop it? Will putting water on the concrete cause the coatings not to adhere?

Not an expert but you do not want to get any water on the floor. Moisture content has to be below a certain level for most the floor systems. I moved my hot water out of the garage before my floor was installed and the contractor was paranoid that I would spill water on the floor and delay the install. I wasn't around as he did the install so I don't know what he did to dedust the floor after grinding - sorry.

A grinded floor can be power washed or mopped. Just let it dry fully before coating it. Any doubt, do the plastic sheet moisture test before you coat.
Do you do that after you have ground the floor? If so how long do you normally wait for it to fully dry? If you don't power wash or mop how do you remove the dust to an acceptable level? Do you vacuum or more? Just curious.

I just wiped it down with rags and denatured alcohol, it's a million times better now and I shouldn't have to wait as long as if I used water.

Just be careful... Solvent evaporates much quicker than water. Verify with your coatings manufacturer that the solvent wipe you are using is OK or use a power washer and give it lots of time to dry.
