I'd forget the 'easy out'. You might want to try drilling it out with a slightly smaller L.H. drill bit (in a reversible drill of course). The offending screw will often 'back itself out' while doing so. Just be sure that the L.H. bit is nice and sharp (and of a good quality). I've removed more than a few badly stuck/broken bolts using this method (mostly exhaust manifold bolts).

Older ones used T jaws that were pinned in (often the paint covers the pins). Later models has screws through the jaws like most vises...

And the really early ones were held on by screws.
Snapped a quick cell phone picture after it was painted and set up for a test fit. I'll get some better pictures once it is reassembled and mounted to the workbench. Will probably try to polish the slide up a little more too. Overall I'm pleased with how it turned out.
