It's a feature of better wrenches. They'll yield before they irreparably round over the fastener.

After watching this, i tried it myself.
I tested an older script logo 10mm Snap-on wrench.
It clicked at 40 ft.lb. I didnt want to needlessly spread it, so i didnt try 50.

I know you can turn a 15˚ open end wrench either way, but it seems natural to apply pressure on the top side of the wrench. In the video, he was "turning" it the opposite. I would be curious to see if this affected the results.
