A bit more details

I am a mechanic by trade and currently in the process of relocating to Australia and alot of my current tools are worn and not worth paying to transport.

Currently I work on mostly European cars and light vans but that could change

No set budget

Teng tools set mentioned was the only one that caught me eye when I looked previously

The reason for complete set is more for the organisation of the tools with everything having a place and I don't have the patient to cut foam for 100s of tools

i've had similar thought to replace all my shop tools with one brand, however that would be a costly and futile process.

I would wait until you get to Australia and look into some of the Japanese brands, like KTC and Nepros and maybe Kinchrome from Australia.
