Campbell Hausfeld 80 Gal Compressor
Pump model: FP070000AV
Motor Number: BM74

I verified that the rod was knocking against the crank. Do these things not have rod bearings?

Don't know about that particular compressor, but non-inset rods are common even on industrial compressors.

With no combustion, loads on the connecting rod are much lower than in a combustion engine.

Some of the more expensive ones do but its really not necessary provided proper lubrication of the journal. They don't spin fast enough or generate enough low end heat to require it. For that matter most small engines, all the way up to 20HP, don't even have bearing inserts. Most you might find is a bronze bushing for the wrist pin.

Here's the next question. The dual stage pump, it's the low pressure rod which has failed. Can I remove the rod (might as well leave the piston in the bore i guess and hope it doesn't work it's way down) and just run the thing with the high pressure piston?

If it does work it's way down, the pump is likely toast. It's also likely to have a lot more vibration from having half of the reciprocating assembly removed.
