I just tried the acid stain on my concrete outdoor top. It was ebony but the for some reason the polished concrete did not color the same as the untouched block. The mortor was also a bit of dark brown color.
In this picture you can see the different color effects between the block, mortar, and the polished top.

I ended up using concrete pool deck stain.

I still need to clear the top but I have to wait for the concrete to gas off.

Polished concrete will typically have been densified, this will stop the effect from occuring. Even if not densified, the closed down concrete helps keep the effect from happening.

You would have to sand the top to get a better result (only if not densified).
