If you don't have a compressor yet, I would not do anything until you got one, and then see what plug it has on it.

Good advice...but I have also been looking at portable electric heaters and they use the 6-30R plug. Has anyone seen a compressor that uses a 14-30R? Or a welder?

In my previous garage I was setup for 120V with my compressor and welder. I built a new house and one of things I requested was 220V in the garage so I could upgrade my equipment. Now, the dryer plug would be understandable in the garage IF I didn't already have one in the utility room...

Just unhook the Neutral, cap it, and use the receptacle type you need for your equipment. If somebody asked me for a 220volt, 30 amp receptacle and no more information than that, I would have provided a neutral as well. Easier to disconnect, then to add.
