I want to use this to add some support for under the countertop between the joist and counter bottom
I would have a bead of liquid nails to fill in the void as the wood is not always flush with the counter

Does it dry hard enough to do this job? I remember the squeezed excess feels soft at least for the first week or so. I know they claim it is not rock hard so things can expand

They made a subfloor version which I am sure is even more pliable

With age it gets as hard as woodpecker lips. I mean like a 15 year old sugar daddy sucker. We used to use it to glue indoor carpet to shelves in a retail setting. I have used it on my subfloor before putting on and screwing down decking. I believe it would work fine in your app. My oldest son installed granite countertops for a while all they used was silicone.

Most Granite guys use silicone for this application. Run a bead on all contact surfaces and it will squeeze out in the contact areas and leave a silicone filled void in the "lows".

The only thing I would caution with liquid nails is once it dries one would have to demo the countertop should it ever need to be removed.

Eventually the liquid nails does dry hard as a rock but it does take a few days or so depending on how thick it is applied.
