If my garage wasn't attached I would use OSB, I used it for the ceiling of my patio cover. I also ripped 2 inch strips of OSB rounded it off with my router and covered the seams with it. Primed it with oil based paint and added two coats of enamel. I would install blocking between the studs where ever a seam ended up which with a air nailer is a piece of cake.
