Dual fan wiring question

In my 30x30x16 garage I have two ceiling fans (no lights) that I want to swap out. They are controlled by a variable speed knob (low to high).

1 - do I nee do purchase variable speed fans again?

2 - I'd really like to change rotation at the switch as I heat it in the winter

I opened up the switch and there's a single red wire.

If the new fans do not include electronic controls in their design, then they should be standard motors that can be controlled by a variable voltage fan controller (the typical cheap fan controller). Some newer fans have more complex electronic controls, but there are still many of the old style available.

Great answer from gmck25. Haven’t fooled with fans for a while and something I didn’t think of as I pondered an answer to the question. Today’s remote control should make this easy.
