All epoxy will turn yellow eventually.
Some faster than others.
If the product you purchased doesn't list a UV inhibitor, it will go yellow.

If you want a top-coat that won't yellow, you want urethane. Either conventional or poly-aspartic.

If covered spots are not changing color, but the open area is - it is LIGHT and doesn't have to be direct sun. Some products more sensitive some less, like paint or wood floor. If it is a chemical problem - the whole floor would change the color.

As others have stated, this is a known drawback of using epoxies. One suggestion might be to remove the mat (for now) and expose that area to more light, and hope that the yellowing "evens out" more. The yellowing would probably be much less noticeable if it was of equal intensity across the entire floor.

nb2841: It will depend on the product and how much UV light hits it.
wqj789: Interior lighting will eventually cause some yellowing but not like day-light.

It's more evident in the lighter colors and clears.
It doesn't literally turn yellow, just not completely clear.
