Finishing a block detached garage

Hi all so I've been a lurker for awhile so I apologize in advance if there are things I'm doing that bother some of you!

I'm in Phoenix, AZ and we just closed on a house that has a 20x26 detached, block garage in the back. I've been given approval from the lady to do more or less whatever I want back there, so I'm looking to make it a mancave.

So far, I've dryloked the floor and the bottom 2 blocks and framed out the bathroom and most of the side walls.

I know the framing should have been PT on the bathroom, but oh well I'll take the gamble that it doesn't mold since we're in Phoenix.

I'm about to frame out the rest of the garage and then insulate the roof -- which I do have some questions about so if anyone could give suggestions as to what type of insulation they'd recommend I'd greatly appreciate it!

Well I guess I can't post pictures since I don't have the post minimum yet. I'll update this shortly.

I'd be more worried about termites. A small crack in the slab, and they're off.

Thanks! I'm definitely going to do electrical. I'm planning on removing the automatic door opener and install a pretty big fan, adding can lights as well. I have a small portable AC in there currently - planning on adding a mini split if it turns out I use it as much as I plan to.

Any suggestions for the insulation I should use in the ceiling? I've read a little about soffits/venting the ceiling but I don't know where to begin.
