Finishing out bar…suggestions?

Shelves inside, for sure. 2x2 supports on the sides, with the rear of the shelves on those horizontal 2x4s. I'd leave the wood at the front as it is, and paint the shelves inside some tan color similar to that wood. It's the back side anyhow. Once you get stuff on those shelves it'll look great.

Shelves inside for sure. I would go with tempered glass even if you have to have them custom cut. Then get power in there and have two spot light pointed down so you can see everything back there while your lights might be dim in the rest of the space. A little extra expense and trouble but so worth it every time you use it. You built a nice thing, let it be all it can be.

^This. I realized that I forgot to address your actual question. I was going to advise exactly what RivennHewn posted there. Every big box home improvement store sells some variation of that product. Cheap, easy to work with and should suit the application well in that it provides a good surface for cleanup of spills, splatter, etc.
