Finishing wall over stem wall.

Putting up a new shop with a bathroom and kitchen areas. The buiding has a stem wall and I'd like to finish the drywall down over the exposed stem wall. See pic.

What is the proper method to do this?

Should I add foam board against the stemwall and fur out over that?

Do you want it insulated at the stem wall or just covered?
If just covered, simpler to paint.
Are you looking for it to be in the same plane as drywall on the studs or a bump out is ok? How big of a bump out is acceptable?
Would the horizontal plane of the bump out need to be a durable surface for use as a narrow shelf?

What's happening in this area? Any water? Likelihood of damage to lower area?

that looks like 3/4"? You could fur the framing out flush to the block and foam board the whole thing, or fur it and use batts in the framed portion. For a bathroom make sure you keep the rough in for the toilet flange correct.

Same plane as wall will require furring out the wall for ~3/4" + insulation thickness. Maybe use 2x4s as furring on the framed wall and 3/4 furring/insulation on stem wall.
