I have two drains in my garage that are in need of repair. Both drain fine but need new grates installed. Any suggestions on how to best accomplish this?

Are these tied to the sewer? That's a bell trap and without the grate you have no trap and nothing to stop gasses coming from the pipe into your garage.

I'd see if you can find a new drain with the same size cover, just use the cover.

You could cut one out but that's a lot more work

That looks pretty ugly! Probably the best thing to do is saw out the concrete and install new drains.

Fab, or have fab'd a 1/4" or 3/16" steel plate with holes sizes of your choice.
