Can you buy trusses like this, or would I have to stick frame? Looking at 28' wide.

Not sure about those exact dimensions, but you should be able to get them built. Find a lumber yard that deals with trusses, and they can design it any way you like.

I feel certain. You'd have to give them some leeway with the timber sizes and the bracing but they can do it.

Likely you can buy them or something similar.

Most authorities will require you to have the truss engineered. If it's getting engineered, you're better off buying the truss pre-made rather than trying to do it yourself.

What's the length of the ridge? Use a ridge beam and lay conventional rafters against it. This removes any truss triangulation and frees you from the ceiling joist/rafter ties. You may need to temporarily laterally brace the beam to prevent any bowing until the roof is sheeted. You'd get great overhead space in there too.

I'm in the middle of the sticks and there's 2 truss companies within 40 miles of me. You just take them your drawing and they'll engineer the trusses.

I basically did that. Bought specially designed attic trusses for my garage build. They are very much like what you showed so that the attic room is set toward the back of the building and the rear part of the truss has a 4 foot vertical height to it. The only difference is that I've got 6/12 pitch to both the front and rear part and they don't look quite as simple as you've sketched.
