Do full size (8, 10, 12") diamond files exist? I'm looking for something to sharpen an axe or two. I've found the files listed below, which have a full size grip, but not a full size cutting section. Am I wrong to think I need more cutting area?

I have a set of those in your link and they will work for axes. In fact I put hair popping edges on all my axes with this set and all my dozens of knives as well.

That sure looks like a set of hones I would like to have.. But when referring to a file; I picture My steel files in the lengths You mentioned: Nicholson General Purpose Mill File.
Available in Black Diamond single cut and double cut. A few year back; I stocked up when Lowes had them on closeout.. I have been using USA made Nicholson files for decades. If they are properly used, cleaned, and stored; they last a long time.. I have been well pleased with them.

I prefer more cutting area. Here's a tip: if you can't find a file, just use a sharpening "stone" upside down.

I've got a diamond sharpening plate that's around 12" long, but I don't recall who made it (I'll have to remember to take a look, but I've had it a LONG time).
