Okay- total newb deal here.
I have a garage built in the stone age-just kidding- but close.
I have a single slot, fuse box.
I want to change this out to a breaker panel for obvious reasons.
I have access to turn off the feed, can take care of that.
Is this really as plug and play as it appears, disconnecting the hot wires where they come in and reconnecting or?

What is the gauge of the wire feeding your current single fuse? That might severely limit your options. I hope you’re not planning to hook a 12 ga. ungrounded cable to a big sub panel.
What electrical loads are you anticipating in that garage? Plan ahead.
You might consider running a new feed from your main panel and do it properly.

Is the current circuit grounded with an EGC?

You will need to add ground rods.

^ This, if only has a #14 or 12 wire feeding it just leave the fuse box alone until you decide to upgrade the rest.

What are your obvious reasons? Do you blow fuses often? That's not the fuses fault, it means you have inadequate wiring.

Have an electrician coming out to do this for me.
Haven't blown a fuse in forever- but.
All the fuse box is running is one freezer, three lights and a single quad box.
This is the start of a major overhaul of the building.
I have never plugged in anything bigger than a drill or a jig saw.
Like to be able to run a small compressor, my little mig welder and such in this building.
Let you know how it goes.

So you need to upgrade the whole feeder to the building not just the fuse box.

A correctly sized fuse is actually better than a breaker in some ways. A fuse will never fail to blow if you overload the circuit where old breakers sometimes do not trip. There are also many classes of fuses commonly available to better protect motors/ect, unlike residential breakers. The fuse is less convenient if you do blow it and you have the problem of everybody putting 30A fuses in 15 and 20 amp circuits.
