Working with GC to spec out my garage.

There are lots of size / height / lot issues where I live.

Would you rather have a garage that is 27 wide and 30 deep, or 30 wide and 27 deep?

Height will be 12 feet

Goal is to store three cars (2 on a lift and one on the ground) - lift will have extensions on it to also use for working on vehicles. Want ample space all around the car (16 feet long) to work on it.

I will be dissassembling car, rebuilding engine, and putting it all back together

Thoughts?

you want it wider to allow for space between cars

the posts for the lifts also take up valuable floor space & maneuvering space.

I think you mean a 2 post lift to store one on the lift and one car below ?

The footprint of the lift will take 10' width min. +3' from the side wall for clearance +3 feet for clearance to next bay.. = 16'

30 wide = about 29'-2' inside width (depending on garage wall thickness)

29'-2 - 16' = 13'-2 for the second bay

A typical parking stall is 9'X20' so you have 13'-2 - 9' = 4'-2 clearance to the opposite exterior wall.

It can be done but it will look "full" when the cars are parked in it

27' deep will give you about 6' clearance at the back wall x 29'-2 long. that should be plenty of space for a bench, tool box, etc..

hopefully you have a shed for the bicycles, lawn mower, etc.

not much room for much else you have to plan the layout and keep clutter to minimum

to clarify I am thinking 4 post lift so I can store a total of three cars in garage when not working, and then when working one on lift and one in other bay

Should I try to push for a foot or two in both directions?

Cost goes up exponentially over this size (30 x 27) as I'll literally be removing a hill, but if it makes a large difference in lack of clutter (I hate clutter) then ill do it

I would go for wider myself, but it will depend on what kind of vehicles you own. A crew cab long bed pickup is a lot longer than a MINI. :)
