3" of closed cell is plenty of insulation. And you don't want or need to vent it. You can get kits and do yourself if you want to save a few bucks. Since it is a "living area, you will need some fire stop such as drywall or panel metal roofing/wall panels. That is code in NY.
That roof is plenty strong, don't let anyone tell you you need more structure.
I like the look of the ceiling and if it were mine, I'd get some used foam panels off of CL and cover the roof on the outside with it and then pick up metal roof panels and roof over that. You won't lose any headroom, and have a lifetime roof. You could put more panels between the wall studs. It will strengthen the structure at the same time.
My house has the closed cell at 4" and even discussed with a guy who has his own company here and he only has 4" in his house. He agreed that open cell while seems cheaper, it doesn't do the same job.
