with a low head kit you can probably go to an 11' (or slightly higher) door max

That is going to depend on your local code and you really need to consult a local engineer.
But if you are using trusses, the gable end walls don't bear any of the roof load, so you don't need a large header at all. The only question then becomes how much shear load (wind) does that gable wall need to resist, and what does it take to achieve that rating.

Off the shelf, probably a 10' door. However, if you want the max door height, stop by a overhead door dealer in your area. These are the guys that will know and probably give you the best deal. You might also want to check out their install price.

Absolute minimum clearance for a low headroom torsion door is 9.5", no room for a trolley opener and it will be tight. Can you use a different style truss?
