Garage drywall question

Just starting my garage transformation. It's a 2-car garage, not attached to the house but is attached to the neighbours' garage. It's about 11 years old. The adjoining wall is drywalled, taped and mudded.

I have drywalled the remaining walls and my intention was to spot fix areas on the existing drywall that are an issue. As you can imagine, the unpainted drywall has a couple of holes, however, in some cases near the bottom the taping is coming away and the paper is bubbling away due to moisture at some point. It's not damp currently.

I believe code in Ontario might state that I need to install 5/8" fire drywall. I only have 1/2". Would it be wrong to take my new drywall and install it directly over the old, effectively covering up the issues and providing even better fire resistance?

In the UK it is not uncommon to double up sheet rock to get improved fire resistance so I imagine it is OK although if you need to conform to local codes you may want to check first.
