Nice design!

Beats the Engine Hoist and noose around the neck in the driveway I subjected my neighbors to for a while.

Now I just quarter the deer in the field and take the hind quarters, tenderloins and back straps. The fronts are just too small to do anything with (though I am gonna try smoking them this fall). I don't even gut deer anymore... disassemble them through the back to get the straps and tenders, then take the quarters and leave the front half and body cavity intact for the buzzards.

I really like your gambrel design.

we built this outta old industrial steam pipe and a schitt load of hard yakka tryin to drag it to back of garage for installation.
A coat of "hammerite" epoxy anti rust paint makes it looka million bucks.
This is to process animals that we cannot rush thru in big country as we get so much.... I don t like wastin trimmings as they can be used for meat pies and sausages.
