Garage interior finish question

I am in the process of starting a new shop/garage. It will be 30 by 40 and insulated but not heated.

I am considering what type of interior wall finish to use. The 3 options I am looking at are Chip Board, Plywood, and normal Gypsum.

Does anyone have any recommendations?

I'm new around here so I'm not sure what the above means?

Went with 3/8" t-111 plywood in mine for kind of a barn look. I hate drywall work.
