garage sub-panel ground question

All,
I am getting ready to run the wiring for a 100-amp subpanel in my detached garage. My question relates to grounding rods.

First question: one or two grounding rods? If two, how far apart.

Second question: Do the grounding rods need to stick out of the ground or can I attach a copper cable to them and keep them several inches below ground (so the top of the ground rod cannot be seen or tripped over).

2 rods about 10 ft or so apart, dig a small hole and pound them down out of the way, I like them under the eve where the run off water is.

They only have to be a minimum of 6' by code.

I usually dig a 6.5' trench, pound rods at each end and run one continuous #4 bare copper from one rod to the next to the panel. The top of the rods must be flush with or below ground level.
